I love baking muffins! It’s easy, quick and you can pack it with healthy ingredients for your family. Have you read the ingredients on store bought muffins? Eeek. Look I was guilty of buying them…until I realized how quick breakfast muffins are to make. And they all make the perfect after-school snack!
Applesauce Oatmeal Muffins with Chocolate Chips has become my go-to recipe for breakfast thanks to Taste Better From Scratch…with a few adjustments. 🙂
Applesauce Oatmeal Muffins with Chocolate Chips
Ingredients
- 1 1/4 cups old-fashioned rolled oats
- 1 1/4 cups unsweetened applesauce (I love the Trader Joe’s brand)
- 1/2 cup oat milk
- 1 large egg
- 1 teaspoon vanilla extract
- 4 tablespoons melted coconut oil
- 1/3 cup granulated sugar (I do slightly less than this. )
- 1 cup flour
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup semi-sweet chocolate chips
Directions
Turn oven to 375 degrees and prep a muffin tin with liner or grease with a non-stick cooking spray. I used a 24-cup mini muffin pan and greased it with coconut oil.
Stir together oats, applesauce, milk, egg, vanilla, butter and sugar in a bowl. In a separate bowl, mix the flour, baking powder, baking soda, cinnamon, and salt. Once mixed, add in the wet ingredients plus the chocolate chips and stir until combined. Don’t over mix!
Spoon the batter evenly into the muffin cups. Bake at 375 degrees for about 15 mins. Insert a toothpick to check if the center comes out clean. Remove and set on a cooling rack. Enjoy!
