Caiden is going to school in a couple of days. Eek. It’s been a really fun Summer but I’m ready for school to start. We’re almost done with our shopping and this weekend I’ll be planning and prepping lunches for my picky eater…including after-school healthy snacks .
Last week I shared a Pita Pizza recipe and this week I’m excited to share a superfood smoothie recipe! Acai and Chia Seeds are two superfoods filled with health benefits to help refuel your kids after a long day of school. Acai is packed with antioxidants, vitamins, and minerals while chia seeds contain omega-3 fatty acids, fiber, iron, calcium, and antioxidants as well. Put these two together (along with other ingredients from Milk and Eggs) and you’ve got a treat your kids will love!
After School Snack Recipe: Acai Chia Seed Pudding Smoothie
Chia Seed Pudding:
1/4 cup chia seeds
1 cup coconut milk
Sweetener to taste (I like to use honey)
In a bowl, gently stir ingredients together. Cover and leave overnight in refrigerator to set. This is my go-to ratio for chia seed pudding, fyi. Using this ratio gives it the perfect consistency. Once set, stir to remove the clumps and set aside.
Acai Smoothie:
1 frozen Acai puree packet
1 frozen banana
1 cup coconut milk
Blend until smooth.
Pour a little smoothie into a glass, then alternate with chia seed pudding in the middle, and finish it with more smoothie. Don’t forget to top it with fresh fruits and/or granola. For this recipe I used a toasted coconut granola! Enjoy!
